Arugula, Pear, and Feta Salad

Ingredients Yield: 4 servings 4 cups trimmed, torn, fresh arugula 2 fresh pears, washed and trimmed 1/2 cup crumbled Greek Feta 1/3 cup coarsely chopped, fresh Greek pistachios 1/3 cup extra-virgin Greek olive oil 3 tablespoons Greek raisin or aged red-wine vinegar Salt and freshly ground black pepper to taste Preparation 1. Place the arugula in a salad bowl. Core and cut the pears into quarters. Place the pears upright over the arugula. Sprinkle with Feta and pistachios. 2. Whisk together the olive oil, vinegar, salt, and pepper and pour over the salad. Serve immediately. |
