Fyriki Apple Spoon Sweet

Ingredients
For 24 Servings

24 fyrikia apples
1 kilo (2 pounds) sugar
1 glass water
3 Tbsp. lemon juice
Some vanilla
Toasted almonds, optional

Preparation

1. Peel the apples and remove the core carefully so as not to break the apples.
Place in one layer in the bottom of a wide pot, sprinkle with sugar and pour in the water. Bring to a boil and skim the foam off the surface frequently.
Add the lemon juice and vanilla and simmer for another 20 minutes. Remove from heat. Cover the pot with a kitchen towel and set aside overnight.
2. The next day bring back to a boil over low heat until the apples brown lightly.
As soon as the syrup thickens slightly, let cool and transfer into a clean jar. Add some toasted almonds if desired.
