Apple – Spinach Salad with Mint Olive Oil

Ingredients

2 servings

½ cup extra virgin Greek olive oil
10 fresh mint leaves
10 large tender spinach leaves, trimmed, washed and spun dry
1 onion, finely chopped
1 celery stalk, trimmed and chopped
1 Tripoli apple, cored, quartered and cut into thin slices
1 green apple, cored, quartered and cut into thin slices
1 orange, peeled and cut into wedges
1 grapefruit, peeled, trimmed of the pith, and cut into slices
Juice of 1 lime
Juice of 1 orange

Preparation

1. Pulse the mint leaves and olive oil together in a food processor. Let stand for 30 minutes and strain the oil through a fine mesh sieve. Set aside.
2. Toss the spinach, onions, celery, and fruit together in a serving bowl. Whisk together the mint oil and lime and orange juices. Pour over salad, toss, and serve.
