Stelios Parliaros
was born in Constantinople in 1959. He comes to Athens in order to continue his studies and this when he discovered his talent in confectionery and decided to dedicate himself to it. In 1980 he created the pastry shop FRESH and thereby changed the course of confectionery in Greece. He studied in Paris at the Ecole Le Notre, the Escoffier School of confectionery at the Ritz Hotel, at the Valrhona School in Lyon and, finally, at the renowned Fauchon. In 1999, he had his first book published "Mild Tastes – Sweets and Flavors of the Mediterranean". In 2000 he published his next book Chocolate and the year 2001 another book, The World’s Delights came out.
